Raw Apple Cake Recipe

Ok, so this recipe has very little to do with hunting, unless you count hunting for apples, or it being a treat to take on a hunting trip, or…I don’t know how else. I do have a recipe section though, one that has been neglected quite a bit. And, this is one of my favorite cakes my Grandma used to make.
I recently got the recipe from my mom and since no one here besides me has had it, I made one today. Actually, me and my five year old son made it, since he wasn’t in school today. It gave us a desert for supper tonight and provided some much needed entertainment for him. And it never hurts for a boy to learn to cook as early as he can, right?
Here’s the recipe. Enjoy!
Raw Apple Cake
3 C. flour
1 tsp soda
1/2 tsp salt
2 C. sugar
1 tsp cinnamon
2 Tbsp vanilla
3 eggs, slightly beaten
1 1/4 C. cooking oil
3 C. chopped raw apples
1 1/2 C. chopped nuts
Combine all dry ingredients and mix well, then add apples and nuts.
Combine remaining ingredients, and then add to apple mixture.
DO NOT USE ELECTRIC MIXER.
Mix well, pour into a greased and floured angel food pan and press down with back of hand, and bake at 350 for 1 hour and 15 minutes.
Check after about 45 minutes as ovens vary.
You can make a powder sugar glaze frosting to top it, or leave it plain.
